Crock Pot Carrot Soup

This is the time of year when everyone seems to be suffering from the common cold or coming down with the flu. Nothing will warm you or your loved one up faster than this yummy soup.

And as I always say, don’t be afraid to get creative! Gingerroot and other spices can be added or used in place of the nutmeg. Or throw in some apple juice instead of the orange juice. The sky is the limit. Enjoy!

Ingredients Needed To Make Carrot Soup

  • 1 pound bag of ready-to-eat baby carrots
  • 2 large onions
  • 5 1/4 cups of chicken broth
  • 1/2 tsp salt
  • 1/2 cup heavy whipping cream
  • 1/2 cup orange juice
  • 3 T brown sugar
  • 1 teaspoon nutmeg
  • 1/4 teaspoon black pepper
  • fresh herbs for garnish

How To Make Slow Cooker Carrot Soup

Spray 4 to 5-quart crock pot with cooking spray. Add carrots, onions, broth, and salt. Mix well

Cover; cook on Low 8 to 10 hours.

Pour 4 cups of the soup mixture into a blender; add half each of the whipping cream, orange juice, brown sugar, nutmeg, and pepper. Cover and blend until smooth; return to crock. Blend remaining soup mixture with remaining half of ingredients; return to crock.

Increase heat to High. Cover; cook an additional 15 to 20 minutes or until hot. Garnish individual servings with parsley or other fresh herbs.
