I’m a carb junkie! There’s nothing that makes me feel better than curling up to a bowl full of starchy, yummy goodness. And one of my all-time favorite recipes is Crock Pot Creamy Au Gratin Potatoes.

What I love about making this dish in the crock pot is that the flavor is intensified and the texture (when not overcooked) is perfect. It really is the ideal comfort food!

Crock Pot Creamy Au Gratin Potatoes

You can choose from a wide variety of potatoes in this recipe, which I love. My favorites are Yukon Gold and Russet. Both have a thicker texture which allows them to withstand being baked without becoming mushy. You can also add a variety of spices. I’m known to get a little crazy with Old Bay Seasoning. Others to try are garlic powder and rosemary. Feel free to mix up the cheeses, too. Some people prefer a blend of cheddar and Colby.

Ingredients needed to make Au Gratin Potatoes in the Slow Cooker

  • 8 potatoes, sliced into 1/4 inch slices
  • 2 onions, sliced into rings
  • salt
  • pepper
  • 6 T butter
  • 6 T flour
  • 1 tsp salt
  • 4 cups milk
  • 3 cups cheddar cheese

How to Cook Potatoes in the CrockPot

Spray a 3 to 5 quart crock pot with cooking spray.

Place half of the potato slices in the bottom of crock pot. Season with salt and pepper.

Place half of the onions as a layer over the potatoes.

Repeat with remaining potatoes and onions, seasoning as you go.

In a medium saucepan melt butter over medium heat. Add flour and salt and cook for one minute.

Whisk in milk and cook until slightly thickened, approximately five minutes.

Add cheese, whisking until melted.

Pour over potatoes and onions in crock pot.

Set crock pot on low heat. Cook for 5-6 hours or until potatoes are tender.

The good news is that you really can’t screw this one up as long as you stick to the measurements and cooking time. It really is the perfect side dish for any meal.
