This Crock Pot Fiesta Taco Casserole is a hearty recipe that will feed a crowd. This is family-approved and full of flavor!

I’m a big fan of casseroles! I love that they can feed a small army and still be leftovers for the next few days. While I’m not a big fan of spicy foods, this Crock Pot Fiesta Taco Casserole is about as close to casserole heaven as you’re ever going to get. This smells so delicious while it’s cooking and it’s great for those cold winter days. All the goodness of a freshly-prepared taco, but in a casserole!

Ingredients needed to make Taco Casserole in the Slow Cooker

  • 1 lb lean ground beef
  • 1/2 cup chopped onions
  • 1 clove of minced garlic
  • 1/2 cup bell peppers chopped
  • 4 drops hot sauce
  • 1 can (15 ounces) tomato sauce
  • 1 tsp chili powder
  • 1 cup frozen corn
  • 1 can (15 ounces) kidney beans
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cans (16 ounces each) chili
  • 1 pound shredded cheddar cheese
  • tortilla cheese

*Sometimes I add in some rice as well and stir it in because it’s a great texture and taste! 

How to make Crockpot Taco Casserole

Brown ground meat; drain well. Add onion, garlic, and pepper and cook until transparent.

Add remaining hot sauce, tomato sauce, and chili powder.

Grease crock pot and layer in 5 layers, beginning with meat mixture and nacho cheese tortilla chips, then the corn, kidney beans, diced tomatoes, chili, and grated cheese.

Cover and cook 6 to 8 hours on low.

Serve this easy-to-make casserole with a tossed salad for a wonderful everyday family dinner. Feel free to try it with lean ground turkey instead of beef as well.

Don’t forget to add in your favorite toppings to really take it over the top. There is always room for more shredded cheese and even some diced jalapenos for an extra kick.
