Crock Pot Pumpkin Bread
You know by now that I am a BIG pumpkin lover. Big. Huge. Obsessed. If it says pumpkin, smells like pumpkin or even looks like there’s pumpkin in it, I’m there! That’s why I was doing cartwheels to discover another crockpot recipe stashed in the bottom of my grandmother’s recipe tin. This one is for Crock Pot Pumpkin Bread, and I’m telling you, you’ll never taste one better!
Slow Cooker Pumpkin Bread
It might seem odd not to just stick the pan into the oven, but crockpots have a way of intensifying flavors and making things moister. This is exactly the type of pumpkin bread you’ll end up with. Melt in your mouth, flavor bursting seasonal awesomeness!
Ingredients Needed To Cook Pumpkin Bread
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1-15 ounce can of pumpkin
- 1 1/2 cups flour
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/3 cup nuts, optional
How To Make Pumpkin Bread in the CrockPot
Blend oil and both sugars in a large mixing bowl.
Stir in beaten eggs and pumpkin. Add remaining dry ingredients and mix well.
Pour batter into a greased bread or loaf pan.
Add two cups of water to a five to six-quart crockpot and gently place the pan inside. To prevent scorching the bottom of the pot, wad and flatten balls of aluminum foil and place them under the pan.
Cover the top of the crockpot with ten paper towels. This is to trap condensation and keep the bread from becoming mushy.
Place the lid on top of the crock pot and bake on high for 3 hours.
Drizzle the top with your favorite frosting or glaze or leave it plain!
Tips for Making Pumpkin Bread
It’s very important that you place paper towels over the pan and then cover them with the crockpot lid. If you don’t, you’re going to end up with pumpkin pudding…make that sauce. Also, don’t lift the lid at all. Let the pot do its thing for a solid three hours.
