Fall is here! That means it’s time to get ready for apple season. A few years ago I posted a Crock Pot Apple Cake recipe that went nearly viral. I hope this one is shared just as much because it’s low in fat, so easy to make, and one the whole family will enjoy.
Crock Pot Walnut-Stuffed Glazed Apples come out tender (but not mushy) and will have your entire house smelling like a bakery (or apple farm).
Crock Pot Walnut-Stuffed Glazed Apples
Serve these apples warm from the crockpot with low-fat frozen yogurt, ice cream, or a side of low-fat coffee cake. Any apple variety does the trick but my favorites are Golden Delicious and Granny Smith.
Ingredients Needed To Make Stuffed Apples
- 1/2 cup chopped walnuts
- 3 T dried currants or raisins
- 2 1/2 tsp brown sugar
- 1/2 tsp ground cinnamon
- 4 apples
- 1 cup brown sugar
- 3/4 cup apple cider or juice
How to Make Walnut Stuffed Apples in the Slow Cooker
Combine the first ingredients in a small bowl; add 1/4 teaspoon cinnamon, stirring to combine.
Remove upper 1/4 of apples and core.
Place apples in a 3 to 4-quart crock pot. Spoon walnut mixture into the cavity of each apple.
Combine the remaining 1/2 teaspoon cinnamon, 1 cup brown sugar, and apple cider/juice in a small bowl, stirring to combine. Pour over apples.
Cover with lid; cook on LOW for 2 hours.
Spoon 1/4 cup cooking liquid over each serving.
Garnish with additional walnuts and brown sugar.
