Variations on Chicken Teriyaki Stir Fry

You can always change up this recipe any way that you want but one simple way to alter the taste and outcome is to make this a simple vegetarian dish. Just remove the chicken, add in a few more veggies, and you’ve got yourself a tasty vegetarian dish that you’ll love.

Kicking up the spice a few degrees is an option as well. Add in some chili pepper flakes and set those taste buds on fire.

Ingredients:

  • 1/4 cup teriyaki sauce
     
  • 1 tablespoon honey
     
  • 1 tablespoon sriracha sauce (optional for added spice)
     
  • 2 large chicken breasts, cut into 1″ pieces
     
  • 1 can, 20 oz, pineapple chunks, drained
     
  • 1/2 cup carrots, cut into 1/4″ pieces
     
  • 1 red bell pepper, seeded and sliced thin
     
  • 3 green onions, chopped, optional for serving
     
  • 4-6 servings of prepared white rice, optional for serving

How to make Chicken Teriyaki Stir Fry

Preheat oven to 450 and grease a baking sheet with nonstick cooking spray and set aside.
 
Add teriyaki sauce, honey, and sriracha if using, in a small bowl and mix well.

In a separate large bowl, add chicken, pineapple, carrots, and pepper and mix well.

Pour sauce into a bowl and mix well to evenly coat. Spread onto prepared pan in a single layer.

Bake for 15-18 minutes or until chicken is no longer pink. Serve topped with green onions and over rice if desired.
