My kids started school a few weeks ago, and the BACK TO SCHOOL grind is real. I don’t know what it is about packing school lunches that I can’t stand, but I at least feel grateful that my kids don’t ask to buy the school corn dogs too often (*shudder*)

I’m always looking for some easy, quick ideas for their lunch boxes. I have three kids that go to school all day now, so let’s just say that packing school lunches gets a little hairy around here. We’re all in a rush, but I also want them to eat good too.

And, believe it or not, my twelve year old is the pickiest out of all my kids!

She doesn’t like sandwiches (which makes me question that she is my child) but thankfully loves chocolate (which confirms she is my child).

So, I’m always trying to brainstorm ideas with her. Especially ones that don’t include a half a leftover cookie and some tortilla chips. I need to know that she’s getting good nutrition because she’s such a little thing, too.

So, one thing we serve often around here is egg salad. A few years ago, I was surprised to discover that all three of my kids love egg salad, and it’s a great option for lunches too because it has lots of protein to keep their bellies full when they are learning all day at school.

La Tortilla Factory Egg Salad Wrap

This recipe paired well with the flavor of the Power Green Wrap.

Ingredients

• 2 hard boiled eggs
• 2 tablespoons mayonnaise, or try Greek yogurt
• 1 teaspoon mustard
• salt and pepper
• fresh spinach or mixed greens
• LA Tortilla Factory Spinach + Kale + Chard Power Green Wrap

Instructions

1. Chop egg with a slicer - slice the egg and then turn it and slice it the other way to make small pieces of egg.
2. Place into a mixing bowl.
3. Add mayonnaise and mustard and mix well.
4. Season with salt and pepper. 
5. Place egg salad onto the center of a wrap.
6. Place fresh spinach on top of the egg salad.
7. Roll the wrap tightly. 
8. Serve with a serving of fruit and veggies such as carrots and fresh strawberries.
