You know that I am a pumpkin addict. I cannot wait for the holidays or fall weather to roll around to get my fix. I’m eating this squash (yes it is) twelve months of the year!

These Pumpkin Spice Muffins with a simple glaze are full of pumpkin flavor and a hint of spice which fills my addiction. Pumpkin Spice Muffins are perfect for breakfast, dessert, or a snack. They’re not too sweet and are rather low in fat.

This thought that you can only eat pumpkin at a certain time of the year makes me feel sad so you know I’ll sneak this recipe in whenever I can. If you’re looking for an easy pumpkin recipe that will have you loving every bite, get ready to love these easy pumpkin muffins! 

Ingredients needed to make Pumpkin Muffins

  • 1/4 cup softened butter
  • 1/2 cup sugar
  • 1/4 cup packed brown sugar
  • 2/3 cup canned pumpkin
  • 1/2 cup buttermilk or sour milk
  • 2 eggs
  • 2 cups of flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons of pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 T milk or almond milk

How to make Homemade Pumpkin Muffins

In a large bowl, cream butter and sugars until light and fluffy. Beat in the pumpkin, buttermilk, and eggs.

Combine the flour, baking soda, baking powder, pumpkin pie spice, and salt; gradually add to the pumpkin mixture just until blended. Fill greased or paper-lined muffin cups two-thirds full.

Bake at 375 degrees for 20-25 minutes for regular muffins, or 12-15 min for the mini muffins, or until a toothpick inserted in the muffin comes out clean.

Cool in pan for 5 minutes before removing to a wire rack. Spoon glaze over the cooled muffins.

Combine powdered sugar, cinnamon, and milk, until desired consistency. Spoon over muffins and let set.

Feel free to add additional cinnamon, nutmeg and, ground cloves, or get creative. You can spice up your muffins any way you like. Add some crushed hazelnuts, a splash of vanilla, or anything that makes you smile! Enjoy!
