Mini Corn Dogs are a mom’s best friend on a busy night.
I love that I can whip up a batch of these in under 20 minutes. Not only are the kids happy they have something they love, but I am also happy I’m not slaving over the stove for hours.
Finger foods are always a good choice when the kids are at the dinner table, and the good thing about this recipe is the adults approve of it too.
Mini Corn Dogs Recipe
Sometimes moms and dads just need the night off. The bad thing is, we don’t always get that chance. One of my solutions is to always have ingredients on hand to make these simple miniature corn dog muffins for the kids.
I know they will eat them with no complaints, and they are fast enough to make that I can have them on the table in under 20-minutes on those super busy nights.
Can I Freeze Mini Corn Dogs for Later?
You sure can. For this recipe, you will need to freeze them after baking. Simply follow the directions as shown below, and allow them to cool completely.
I like to put them into a large freezer storage bag that has been dated and labeled with the recipe name. Then, all you have to do is pop them into the microwave for 60-90 seconds to heat through when ready to serve.
Note: These are good for up to 4 months in the freezer.
What Should I Serve With These?
Classic hot dogs or corn dogs would come with french fries. You can definitely serve them up with this recipe by making them in your air fryer or baking while the mini corn dogs bake. However, you may prefer to add something a bit more nutritious with this recipe.
In that case, my kids like a plate of “dippable” foods. I put 3 of the mini corn dogs in one part of the plate with a small ramekin of mustard or ketchup for dipping.
Then, I add sliced cucumbers, carrots, celery, and other vegetables to the other side of the plate with a small ramekin of ranch dressing to dip. They love this and I feel better because I am giving them some nutritious vegetables.
Variations on Mini Corn Dogs Recipe
Want something different than just a plain corn dog? This recipe is perfect for that! You can add to this in so many ways to make the flavors different.
I love how versatile the recipe is and how truly simple it is for me to whip up and alter if desired. In fact, I occasionally make one batch plain for the kids, and another batch upgraded for the adults.
- Use different sausages or hot dogs for unique flavors. I like cheddar dogs, turkey sausages, jalapeno sausages, and even apple chicken sausages.
- Add shredded cheddar cheese into the corn muffin batter.
- Top with a mixture of cream cheese, cheddar cheese, and diced jalapeno for a “popper” flavor.
- Mix in diced onions and jalapeno into the batter.
- Add bacon bits or a small slice of bacon around the hot dog piece.

How to Make Mini Corn Dog Muffins
Begin by preheating your oven to 400ºF. You will also want to grease a muffin tin with nonstick cooking spray and set aside until ready to fill.
Cut each of your hot dogs into 4 small but equal pieces.
In a large mixing bowl, you will combine the muffin mix, milk, eggs, and any variations if desired.
Now, you will pour around one tablespoon of batter into each spot in the prepared muffin tin.
Add a hot dog piece into each muffin tin, and then top with another spoon of the cornbread mixture.
Bake as directed for 8-10 minutes until golden brown!
