Can we all just agree that there’s something fun about eating tater tots? This is why this Tater Tot Taco Casserole recipe is one of my go-to favorite dishes.

Just pop ’em in your mouth and enjoy it. 

And I have to admit, this recipe is actually kind of fun to make, too. The layering of the dish is easy and then being able to place those cute little tots on top is great for my OCD tendencies for sure.

Heck, you can even have the kids join in on the fun! They’ll love to add in the layers and make it all nice and pretty. Or just let them be wild and spell out something fun and funky with the tater tots on the very top.

You can. This recipe is just giving you a basic outline but ultimately, it’s your recipe to do what you want with. If you want to add in more veggies, go for it. Are you a fan of garlic? Dump it in! You can take control and tailor it to your tastebuds easily. 

What toppings go well with this taco casserole?

I’m all about the toppings! Think extra shredded cheese, chives, sour cream, salsa, diced jalapenos, and even more onions. But really, again, you can top it with whatever you would like! 

Variations on this Tater Tot Taco Casserole recipe

You can really take this casserole and make it your own.

If you don’t want to add in the taco seasoning, you don’t have to.

If you want to use pork instead of beef, go for it. 

If you want to triple the number of tater tots, cram those babies in there and cook it up. 

You’ll find that the more you make this dish, the easier it is to do! 

Ingredients

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1 tablespoon minced garlic
  • 1 packet, taco seasoning
  • 1 can, 15.5 oz, black beans, drained and rinsed
  • 1 cup of frozen corn
  • 1 can, 10 oz, red enchilada sauce
  • 1-1/2 cups shredded cheddar cheese
  • 1 package, 16 oz, tater tots (you’ll need about 60 tots)
  • chopped green onions
  • sour cream, optional for serving

How to Make Tater Tot Taco Casserole

Preheat oven to 350 and lightly grease a 9×13 casserole dish with nonstick cooking spray. Set aside.
 
Add ground beef, onion and garlic to a skillet and cook until beef is browned and no longer pink. Drain grease. Stir in taco seasoning. Add beans and corn and heat over medium heat, stirring frequently until heated through.
 
 
Pour 1/3 of the enchilada sauce into the bottom of the prepared pan. Spread beef mixture on top. Spoon remaining enchilada sauce on top of beef. Sprinkle cheese on top. Top with tater tots.
 
 
Bake for 30-35 minutes or until hot and bubbly.
 
 
Top with green onions before serving.
