A kid favorite + an easy recipe is a great way to spend a few minutes together in the kitchen. Serve it up alongside other finger foods like raw veggies, sliced fruit, or sweet potato fries.
Ingredients:
- Corn Muffin Mix
- Milk
- Egg
- Hot Dogs
Optional additions: Use different sausages or hot dogs for unique flavors. I like cheddar dogs, turkey sausages, jalapeno sausages, and even apple chicken sausages. Add shredded cheddar cheese into the corn muffin batter. Top with a mixture of cream cheese, cheddar cheese, and diced jalapeno for a “popper” flavor. Add bacon bits or a small slice of bacon around the hot dog piece.
Instructions:
- Preheat oven to 400ºF. Grease a muffin tin with nonstick cooking spray and set aside until ready to fill.
- Cut each of your hot dogs into 4 small but equal pieces.
- In a large mixing bowl, combine the muffin mix, milk, eggs, and any optional additions if desired.
- Pour approx. one tablespoon of batter into each spot in the prepared muffin tin.
- Add a hot dog piece into each muffin tin, then top with another spoonful of the cornbread mixture.
- Bake as directed for 8-10 minutes. Serve with condiments of choice.
