Rotisserie Chicken Burrito Bowl

One of our absolute favorite ways to use a rotisserie chicken is in this recipe. 

Ingredients:

  • 1 rotisserie chicken (shredded)
  • 1 cup cooked rice (white, brown, or cilantro lime rice)
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (canned or frozen, drained)
  • 1 cup salsa or diced tomatoes
  • 1 avocado (sliced or cubed)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup chopped cilantro
  • Lime wedges for garnish
  • Optional toppings: sliced jalapeños, hot sauce, chopped onions

Instructions:

  1. If you don’t have pre-cooked rice, cook 1 cup of rice according to package instructions.
  2. Heat the black beans and corn in a skillet over medium heat for 3-5 minutes until warmed through. If you want, you can also warm the shredded chicken briefly in the microwave or on the stove.
  3. Start by placing a layer of rice in the bottom of each bowl. Top with shredded rotisserie chicken, black beans, corn, and salsa or diced tomatoes.
  4. Sprinkle on shredded cheese, avocado, cilantro, and any other toppings you like.
  5. Add a dollop of sour cream or Greek yogurt. Squeeze a lime wedge over the top for a zesty kick.
