One of our absolute favorite ways to use a rotisserie chicken is in this recipe.
Ingredients:
- 1 rotisserie chicken (shredded)
- 1 cup cooked rice (white, brown, or cilantro lime rice)
- 1 can black beans (drained and rinsed)
- 1 cup corn (canned or frozen, drained)
- 1 cup salsa or diced tomatoes
- 1 avocado (sliced or cubed)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup chopped cilantro
- Lime wedges for garnish
- Optional toppings: sliced jalapeños, hot sauce, chopped onions
Instructions:
- If you don’t have pre-cooked rice, cook 1 cup of rice according to package instructions.
- Heat the black beans and corn in a skillet over medium heat for 3-5 minutes until warmed through. If you want, you can also warm the shredded chicken briefly in the microwave or on the stove.
- Start by placing a layer of rice in the bottom of each bowl. Top with shredded rotisserie chicken, black beans, corn, and salsa or diced tomatoes.
- Sprinkle on shredded cheese, avocado, cilantro, and any other toppings you like.
- Add a dollop of sour cream or Greek yogurt. Squeeze a lime wedge over the top for a zesty kick.
