Easy Chicken Lo Mein

Ingredients:

  • 8 oz lo mein noodles
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 bag of steam-in-bag vegetables
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste
  • Optional garnishes: sliced green onions, sesame seeds

Instructions:

  1. Bring a large pot of water to a boil. Cook the lo mein noodles according to the package instructions (usually 3-4 minutes). Drain and rinse with cold water to stop the cooking process. Toss them with a bit of oil to prevent sticking and set aside.
  2. Season the sliced chicken with salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until it’s cooked through and slightly browned.
  3. Cook veggies in the microwave according to package instructions.
  4. Add the steamed vegetables to the skillet with the cooked chicken. In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil. Pour the sauce over the chicken and vegetables.
  5. Add the cooked lo mein noodles to the skillet and toss everything together. Cook for an additional 2-3 minutes to heat the noodles through. Serve hot, garnished with sliced green onions and sesame seeds, if desired.
