Ingredients:
- 8 oz lo mein noodles
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 bag of steam-in-bag vegetables
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon sesame oil
- Salt and pepper to taste
- Optional garnishes: sliced green onions, sesame seeds
Instructions:
- Bring a large pot of water to a boil. Cook the lo mein noodles according to the package instructions (usually 3-4 minutes). Drain and rinse with cold water to stop the cooking process. Toss them with a bit of oil to prevent sticking and set aside.
- Season the sliced chicken with salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until it’s cooked through and slightly browned.
- Cook veggies in the microwave according to package instructions.
- Add the steamed vegetables to the skillet with the cooked chicken. In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil. Pour the sauce over the chicken and vegetables.
- Add the cooked lo mein noodles to the skillet and toss everything together. Cook for an additional 2-3 minutes to heat the noodles through. Serve hot, garnished with sliced green onions and sesame seeds, if desired.
