BBQ Chicken Salad

Kick up your ordinary dinner salad and make it the main entree with this scrumptious recipe for our BBQ Chicken Salad.

Ingredients:

For the salad:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce (your favorite brand)
  • 6 cups mixed greens (such as romaine, spinach, and arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 1 cup black beans, drained and rinsed
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

For the dressing:

  • 1/2 cup ranch dressing
  • 2-3 tablespoons BBQ sauce

Instructions:

  1. Coat the chicken breasts with BBQ sauce and let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  2. Preheat your grill or grill pan to medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Let it rest for a few minutes before slicing.
  3. In a large salad bowl, combine the mixed greens, cherry tomatoes, corn, black beans, red onion, avocado, cheddar cheese, and cilantro.
  4. In a small bowl, mix together the ranch dressing and BBQ sauce until well combined.
  5. Slice the grilled chicken into strips and arrange it on top of the salad. Drizzle the BBQ ranch dressing over the salad, or serve separately so each person can pour their own.
