Easy Mini Corn Dogs

A kid favorite + an easy recipe is a great way to spend a few minutes together in the kitchen. Serve it up alongside other finger foods like raw veggies, sliced fruit, or sweet potato fries.

Ingredients:

  • Corn Muffin Mix
  • Milk
  • Egg
  • Hot Dogs

Optional additions: Use different sausages or hot dogs for unique flavors. I like cheddar dogs, turkey sausages, jalapeno sausages, and even apple chicken sausages. Add shredded cheddar cheese into the corn muffin batter. Top with a mixture of cream cheese, cheddar cheese, and diced jalapeno for a “popper” flavor. Add bacon bits or a small slice of bacon around the hot dog piece.

Instructions:

  1. Preheat oven to 400ºF. Grease a muffin tin with nonstick cooking spray and set aside until ready to fill.
  2. Cut each of your hot dogs into 4 small but equal pieces.
  3. In a large mixing bowl, combine the muffin mix, milk, eggs, and any optional additions if desired.
  4. Pour approx. one tablespoon of batter into each spot in the prepared muffin tin. 
  5. Add a hot dog piece into each muffin tin, then top with another spoonful of the cornbread mixture.
  6. Bake as directed for 8-10 minutes. Serve with condiments of choice.
