Ingredients:
- 1.5 lbs beef sirloin or flank steak, sliced into strips
- 1 lb baby potatoes, halved
- 2 bell peppers, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Optional: 1/4 cup balsamic vinegar for extra flavor
Instructions:
- Preheat your oven to 400°F.
- In a large bowl, combine the sliced beef, halved baby potatoes, sliced bell peppers, sliced red onion, and cherry tomatoes.
- In a small bowl, whisk together olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper. If you like, you can also add balsamic vinegar for extra flavor.
- Pour the olive oil mixture over the beef and vegetables. Toss everything together until well coated.
- Spread the beef and vegetables evenly on a large sheet pan.
- Roast in the preheated oven for about 20-25 minutes or until the beef is cooked to your liking and the vegetables are tender.
- Make sure to toss the ingredients halfway through the cooking time for even cooking.
- Once done, remove from the oven and let it rest for a few minutes before serving. Garnish with fresh herbs like parsley if desired.
