Sheet Pan Beef And Vegetables

Cook your whole family dinner on one sheet pan for a delicious, easy meal and a quick clean-up.

Ingredients:

  • 1.5 lbs beef sirloin or flank steak, sliced into strips
  • 1 lb baby potatoes, halved
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Optional: 1/4 cup balsamic vinegar for extra flavor

Instructions:

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine the sliced beef, halved baby potatoes, sliced bell peppers, sliced red onion, and cherry tomatoes.
  3. In a small bowl, whisk together olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper. If you like, you can also add balsamic vinegar for extra flavor.
  4. Pour the olive oil mixture over the beef and vegetables. Toss everything together until well coated.
  5. Spread the beef and vegetables evenly on a large sheet pan.
  6. Roast in the preheated oven for about 20-25 minutes or until the beef is cooked to your liking and the vegetables are tender.
  7. Make sure to toss the ingredients halfway through the cooking time for even cooking.
  8. Once done, remove from the oven and let it rest for a few minutes before serving. Garnish with fresh herbs like parsley if desired.
