Lemon Party Cake

A simple lemon pound cake can become the yummiest (and prettiest!) party cake with a little drizzled icing and a favorite cereal! 

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1/2 cup milk
  • Sprinkles OR try Fruity Pebbles cereal

For the glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice

Instructions:

  1. Preheat your oven to 350°F. Grease and flour a loaf or bundt pan, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then add the vanilla extract, lemon zest, and lemon juice. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix.
  6. Pour the batter into the prepared loaf pan and spread it out evenly.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  9. While the cake is cooling, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth. Adjust the consistency by adding more lemon juice if necessary.
  10. Once the cake has cooled, drizzle the glaze over the top of the cake and add sprinkles! Enjoy!
