A simple lemon pound cake can become the yummiest (and prettiest!) party cake with a little drizzled icing and a favorite cereal!
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 2 lemons
- Juice of 1 lemon
- 1/2 cup milk
- Sprinkles OR try Fruity Pebbles cereal
For the glaze:
- 1 cup powdered sugar
- 2-3 tablespoons lemon juice
Instructions:
- Preheat your oven to 350°F. Grease and flour a loaf or bundt pan, or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then add the vanilla extract, lemon zest, and lemon juice. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix.
- Pour the batter into the prepared loaf pan and spread it out evenly.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- While the cake is cooling, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth. Adjust the consistency by adding more lemon juice if necessary.
- Once the cake has cooled, drizzle the glaze over the top of the cake and add sprinkles! Enjoy!
