Ingredients:

  • 4 salmon fillets (about 6 ounces each)
  • 2 bell peppers (red, yellow, or orange), sliced
  • Optional extra veggies: sliced zucchini, tomatoes, squash
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Lemon slices (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 400°F.
  2. Line a large baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
  3. Place the salmon fillets on the prepared sheet pan. Drizzle with olive oil and lemon juice. Season with salt, pepper, dried oregano, and dried thyme. Rub the seasonings onto the salmon to coat evenly.
  4. In a mixing bowl, combine the sliced bell peppers, sliced red onion, minced garlic, and remaining olive oil. Toss until the vegetables are evenly coated with oil.
  5. Spread the seasoned vegetables around the salmon fillets on the sheet pan in a single layer.
  6. Place the sheet pan in the preheated oven and bake for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized.
  7. Once cooked, remove the sheet pan from the oven. Garnish with lemon slices and chopped fresh parsley before serving.
  8. Serve the sheet pan salmon and veggies hot, with your favorite side dishes like rice, quinoa, or roasted potatoes.
