Our Sweet and Tangy Meatball Subs are a quick and delicious family meal for any night of the week.
Ingredients:
For the Meatballs:
- 1 lb ground beef (or a mix of beef and pork)
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1/4 cup finely chopped onion
- 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Olive oil for frying
For the Sweet Sauce:
- 1 cup marinara sauce
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon balsamic vinegar (optional, for extra depth)
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
For assembly:
- 4 sub rolls or hoagie buns
- 1 1/2 cups shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions:
- In a large bowl, mix together the ground beef, breadcrumbs, Parmesan, egg, garlic, onion, parsley, Italian seasoning, salt, and pepper until combined.
- Shape the mixture into small 1-inch meatballs.
- Heat a bit of olive oil in a large skillet over medium heat. Fry the meatballs in batches until browned on all sides and cooked through (about 8-10 minutes). Remove from the pan and set aside.
- In the same skillet, drain off excess oil, then add the marinara sauce, ketchup, brown sugar, and balsamic vinegar (if using).
- Simmer over low heat for about 10 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld together.
- Add the meatballs back to the skillet and toss to coat them evenly with the sauce. Let it simmer for another 5 minutes.
- Preheat your oven to 375°F (190°C).
- Slice the sub rolls open, place them on a baking sheet, and spoon the meatballs and sauce into each roll. Sprinkle the shredded mozzarella on top of the meatballs.
- Bake the subs in the oven for 5-7 minutes, or until the cheese is melted and bubbly. Garnish with fresh basil if desired.
