Our Sweet and Tangy Meatball Subs are a quick and delicious family meal for any night of the week.

Ingredients:

For the Meatballs:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Olive oil for frying

For the Sweet Sauce:

  • 1 cup marinara sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar (optional, for extra depth)
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)

For assembly:

  • 4 sub rolls or hoagie buns
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh basil for garnish (optional)

Instructions:

  1. In a large bowl, mix together the ground beef, breadcrumbs, Parmesan, egg, garlic, onion, parsley, Italian seasoning, salt, and pepper until combined.
  2. Shape the mixture into small 1-inch meatballs.
  3. Heat a bit of olive oil in a large skillet over medium heat. Fry the meatballs in batches until browned on all sides and cooked through (about 8-10 minutes). Remove from the pan and set aside.
  4. In the same skillet, drain off excess oil, then add the marinara sauce, ketchup, brown sugar, and balsamic vinegar (if using).
  5. Simmer over low heat for about 10 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld together.
  6. Add the meatballs back to the skillet and toss to coat them evenly with the sauce. Let it simmer for another 5 minutes.
  7. Preheat your oven to 375°F (190°C).
  8. Slice the sub rolls open, place them on a baking sheet, and spoon the meatballs and sauce into each roll. Sprinkle the shredded mozzarella on top of the meatballs.
  9. Bake the subs in the oven for 5-7 minutes, or until the cheese is melted and bubbly. Garnish with fresh basil if desired.
