Feed your family this yummy twist on Taco Night!
Ingredients:
- 1 pound ground beef or ground turkey
- 1 small onion, chopped
- 1 packet (1.25 oz) taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced tomatoes (canned or fresh)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 2 cups crushed tortilla chips
- Sliced black olives, chopped green onions, and sliced jalapeños (optional, for garnish)
- Salsa and guacamole (optional, for serving)
Instructions:
- Preheat your oven to 350°F and grease a 9×13-inch casserole dish.
- In a large skillet, cook the ground beef or turkey over medium-high heat until it’s browned and no longer pink. Drain any excess fat if necessary.
- Add the chopped onions to the cooked meat and cook for a few minutes until they become translucent.
- Stir in the taco seasoning mix and follow the instructions on the packet for adding water or other ingredients. Most taco seasoning packets require about 3/4 cup of water.
- Add the drained black beans, corn, and diced tomatoes to the skillet. Stir everything together and let it simmer for a few minutes to heat through.
- In your prepared casserole dish, spread half of the crushed tortilla chips as the base.
- Spoon half of the meat and vegetable mixture on top of the chips.
- Sprinkle half of the shredded cheddar cheese over the meat mixture.
- Repeat the layers with the remaining tortilla chips, meat mixture, and cheese.
- Bake in the preheated oven for about 20-25 minutes, or until the casserole is heated through, and the cheese is bubbly and slightly golden.
- Once out of the oven, let the casserole cool for a few minutes. You can garnish it with sliced black olives, chopped green onions, and sliced jalapeños if you like.
