Taco Casserole

Feed your family this yummy twist on Taco Night! 

Ingredients:

  • 1 pound ground beef or ground turkey
  • 1 small onion, chopped
  • 1 packet (1.25 oz) taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes (canned or fresh)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 2 cups crushed tortilla chips
  • Sliced black olives, chopped green onions, and sliced jalapeños (optional, for garnish)
  • Salsa and guacamole (optional, for serving)

Instructions:

  1. Preheat your oven to 350°F and grease a 9×13-inch casserole dish.
  2. In a large skillet, cook the ground beef or turkey over medium-high heat until it’s browned and no longer pink. Drain any excess fat if necessary.
  3. Add the chopped onions to the cooked meat and cook for a few minutes until they become translucent.
  4. Stir in the taco seasoning mix and follow the instructions on the packet for adding water or other ingredients. Most taco seasoning packets require about 3/4 cup of water.
  5. Add the drained black beans, corn, and diced tomatoes to the skillet. Stir everything together and let it simmer for a few minutes to heat through.
  6. In your prepared casserole dish, spread half of the crushed tortilla chips as the base.
  7. Spoon half of the meat and vegetable mixture on top of the chips.
  8. Sprinkle half of the shredded cheddar cheese over the meat mixture.
  9. Repeat the layers with the remaining tortilla chips, meat mixture, and cheese.
  10. Bake in the preheated oven for about 20-25 minutes, or until the casserole is heated through, and the cheese is bubbly and slightly golden.
  11. Once out of the oven, let the casserole cool for a few minutes. You can garnish it with sliced black olives, chopped green onions, and sliced jalapeños if you like.
