Tater Tot Taco Delight

Change up our Tater Tot Taco Delight according to your family’s likes, and don’t forget about toppings! Imagine heaps of shredded cheese, chives, sour cream, salsa, and diced jalapenos. Easy and yummy is what we’re going for. 

Ingredients:

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1 tablespoon minced garlic
  • 1 packet of taco seasoning
  • 1 can (15.5 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can (10 oz) red enchilada sauce
  • 1-1/2 cups shredded cheddar cheese
  • 1 package (16 oz) tater tots (around 60 tots)
  • Chopped green onions
  • Optional: Sour cream for serving

Instructions:

  1. Preheat the oven to 350°F and lightly grease a 9×13 casserole dish with nonstick cooking spray. Set it aside.
  2. In a skillet, combine ground beef, onion, and garlic. Cook until the beef browns and loses its pink hue. Drain excess grease. Stir in the taco seasoning. Add black beans and corn, heating the mixture over medium heat until warmed through.
  3. Pour 1/3 of the enchilada sauce into the casserole dish’s base. Layer the beef mixture atop it. Spread the remaining enchilada sauce over the beef. Sprinkle shredded cheese generously. Crown the creation with the tater tots.
  4. Bake for approximately 30-35 minutes, or until the dish bubbles and heats thoroughly. Prior to serving, garnish with chopped green onions.
