Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 4 medium-sized flour tortillas
- Cooking spray or butter
- Optional toppings: salsa, sour cream, chopped cilantro
Instructions:
- In a bowl, combine the black beans, ground cumin, chili powder, garlic powder, salt, and pepper. Mash the beans slightly with a fork or potato masher, leaving some texture.
- Lay out two of the flour tortillas on a clean surface.
- Sprinkle a quarter of the shredded cheddar cheese evenly over one half of each tortilla.
- Spoon a quarter of the seasoned black bean mixture over the cheese on each tortilla.
- Sprinkle another quarter of shredded cheddar cheese over the bean mixture on each tortilla.
- Fold the tortillas in half, pressing gently to hold the ingredients together.
- Heat a non-stick skillet over medium heat. You can lightly grease it with cooking spray or a small amount of butter.
- Carefully transfer one folded tortilla to the skillet and cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the second quesadilla.
- Remove the quesadillas from the skillet and let them cool for a minute before slicing them into wedges.
