Black Bean Quesadillas

Warm tortillas, melted cheese, zesty black beans, and flavorful toppings = the perfect comfort food for those hectic weeknights.

Ingredients:

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 medium-sized flour tortillas
  • Cooking spray or butter
  • Optional toppings: salsa, sour cream, chopped cilantro

Instructions:

  1. In a bowl, combine the black beans, ground cumin, chili powder, garlic powder, salt, and pepper. Mash the beans slightly with a fork or potato masher, leaving some texture.
  2. Lay out two of the flour tortillas on a clean surface.
  3. Sprinkle a quarter of the shredded cheddar cheese evenly over one half of each tortilla.
  4. Spoon a quarter of the seasoned black bean mixture over the cheese on each tortilla.
  5. Sprinkle another quarter of shredded cheddar cheese over the bean mixture on each tortilla.
  6. Fold the tortillas in half, pressing gently to hold the ingredients together.
  7. Heat a non-stick skillet over medium heat. You can lightly grease it with cooking spray or a small amount of butter.
  8. Carefully transfer one folded tortilla to the skillet and cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the second quesadilla.
  9. Remove the quesadillas from the skillet and let them cool for a minute before slicing them into wedges.
  10. Serve the Black Bean Quesadillas with your choice of toppings like salsa, sour cream, and chopped cilantro.
